The challenging task of laying the foundation was led by Dr. John Knapp, the project coordinator of the Northern Alberta Institute of Technology in Canada, and Dr. Corazon Gatchalian, faculty member of the University of the Philippines-College of Home Economics. It took three years to take care the needs of the industry, formulate a helpful curriculum, develop a powerful team of chef instructors, and build the first culinary school, The Center for Culinary Arts, Manila, Philippines that we know of today.

It is only CCA, Manila that offers extensive 2-yr diploma program in culinary arts and baking and pastry arts. The programs focus on the hands-on laboratory experience during the training to make learning easy and effective.
