Blackcurrant Cheesecake
Calories: 245 per portion
Ingredients:
4 digestive biscuits or Graham crackers
4 teaspoons margarine, melted
10 oz cottage cheese or ricotta cheese
10 oz can blackberries in fruit juice
1 sugar free blackcurrant jelly or a sachet of gelatine
Method:
1. Crush the biscuits and mix with the melted margarine.
2. Put the mixture into a tin, and leave to cool.
3. Drain the blackcurrants and reserve the juice.
4. Put blackcurrants and cheese into a blender and make a puree.
5. Heat the juice and dissolve the jelly into it, you could use natural gelatine in place of a flavoured jelly.
6. Add the cheese puree to the jelly.
7. Mix well, and pour over base.
8. Leave to chill and then serve.
