NEIMAN-MARCUS COOKIES |

(Recipe may be
halved.):
2 cups butter
4 cups flour
2 tsp. soda
2 cups sugar
5 cups blended
oatmeal**
24 oz. chocolate
chips
2 cups brown
sugar
1 tsp. salt
1 8 oz. Hershey
Bar (grated)
4 eggs
2 tsp. baking
powder
3 cups chopped
nuts (your choice)
2 tsp. vanilla
** Measure
oatmeal and blend in a blender
to a fine powder.
Cream the butter
and both sugars. Add eggs and
vanilla; mix together with
flour, oatmeal, salt, baking
powder, and soda. Add chocolate
chips, Hershey Bar and nuts.
Roll into balls and place two
inches apart on a cookie sheet.
Bake for 10 minutes at 375
degrees. Makes 112 cookies.

WITH BROCCOLI |

Ingredients:
2 whole chicken breasts
1 large head or 2 small heads broccoli
1 tsp salt
2 tsp sherry
2 tsp corn flour
1 cup good chicken stock
1 tbsp olive oil
grated fresh ginger to taste. I use about 2 tbsp
(keep fresh ginger in the freezer, and when required
grate it straight from freezer)
1/2 cup cashew nuts or blanched almonds
Crisp Fried Rice noodles or Orgran Rice Pasta
Directions:
- Cook noodles or pasta.
- Skin the chicken, cut into pieces.
- Wash broccoli and break into small stalks.
- Combine salt, browning, and sherry in a
bowl, mix well.
- Heat oil in wok, add ginger, stir fry 1
minute.
- Add chicken, stir fry 1 minute.
- Add sauce mixture and broccoli, bring to
boil, stirring, reduce heat, cover and simmer
3-4 minutes, adding more stock if necessary.
- Add nuts, serve on noodles or pasta.

SUPER EASY SCHOOL LUNCHES FOR FUSSY KIDS

Tip: If you "let your child help you" pack
their "Super" brown bag lunch, they usually will
eat it.
Cookie Cutter Sandwiches
Any sandwich can be made more exciting for your
child if you cut out the bread with a large
cookie cutter in the shape of an animal or
dinosaur, circle, heart, star, or whatever
other cookie cutters you can find that they
would like. Sandwiches made this way will be
great attention getters and will make your child
feel important with their peers at school.
Crawly Bugs on a Log
Wash and cut celery stalks into approximately 4"
to 5 " pieces and fill them with cream cheese or
peanut butter. Now add raisins on top of the
filling and push them down slightly to secure
them. Kids love these and they have fun at
school with these.
Rice Cake People
Using a "rice cake", spread on cream cheese,
peanut butter, or any other spread you like all
over. Now create a face on the top using nuts,
dried fruit, or raisins. You can add coconut for
the hair.
Star Cheese, Fruit, and Crackers
Using a star shaped cookie cutter, cut some
pieces of cheese into stars. Put into the lunch
bag with crackers and fruit. You can cut out
lunch meat "starts" also.
Tortilla or Bread Pin Wheel Sandwiches
You can make pretty pinwheel sandwiches using a
slice of bread or a tortilla. Just spread on
some low fat or fat free cream cheese or other
filling and roll up the bread slice [without the
crust] or a flour tortilla and slice into 1/2"
slices. You can use peanut butter, tuna salad,
egg salad, lunchmeat, etc. Use your
imagination...you can add tomatoes etc.
Wafer Cookie Dips
Pack a cup of fruit flavored yogurt and some
wafer cookies and tell you child they can dip
the wafers into the yogurt. They usually like
these a lot. |
