Hearty Healthy Breakfast Cereal
Makes: 5 Servings
Ingredients:
5 Cups Oatmeal
1/2 Cup Whole Wheat Berries
1/2 Cup Whole Rye Berries
1/2 Cup Brown Rice
1/2 Cup Buckwheat
1/2 Cup Sesame Seeds
1/2 Cup Flaxseed
Water
Directions:
1) Boil water.
2) Mix dry ingredients.
3) Add ingredients to boiling water.
4) Cook until water is almost completely evaporated.
5) Strain cereal & let it sit overnight.
6) Re-heat in the morning.

1 Eggplant - Sliced
1 Tomato Sliced
Fresh Basil Leaves
1 Avocado - Mashed
Salt (desired amount)
Directions:
1) Grill eggplant slices.
2) Spread mashed avocado over wrap.
3) Add grilled eggplant, tomato slices, and fresh basil.
4) Sprinkle salt.
5) Roll wrap & serve!

Ingredients:
4 Cups Whole Wheat Flour (for pastries)
1 Cup Natural Sugar or Sugar "In The Raw"
2 Cups Fresh Blueberries
2 Teaspoons Baking Soda
4 Teaspoons Baking Powder
4 Tablespoons Vegetable Oil
1/2 Cup Soy/Rice Milk
2 Cups Soy Yogurt
Directions:
1) Preheat oven to 350.
2) Combine dry ingredients. Mix.
3) Stir in wet ingredients & mix.
4) Divide batter into 24 portions & add it to muffin holders.
5) Bake for 20 minutes or until a toothpick can be inserted and removed cleanly.

2 Tablespoons Cream Cheese
1/2 Avocado - Cut
1 Tomato - Sliced
1 Leaf Lettuce
1/2 Cucumber - Sliced

1) Spread one tablespoon of cream cheese on each slice of bread.
2) Add leaf of lettuce, cucumber slices, tomato slices, and avocado pieces.

1 Lb. Green or Yellow Beans
4 1/2 Tablespoons Cumin Seeds
4 1/2 Tablespoons Ginger Root - Grated
1 Cup Tomatoes - Chopped
9 Garlic Cloves - Crushed
9 Tablespoons Dried Cilantro
1 1/4 Lb. Red & Green Peppers
3 Green Chilis - Chopped
8 Dried Red Chilis - Chopped
1 Lb. Cauliflower
Directions:
1) Dice green bean pods.
2) Break apart cauliflower & then dice into smaller pieces.
3) Slice & dice red and green peppers.
4) Grease a pan & add chopped chilis and diced vegetables.
5) Add crushed garlic cloves, grated ginger root, and green chilis - and stir.
6) Cover pan with a lid & cook at a lower temperature until vegetables
are soft.
7) Sprinkle cilantro over the top & serve.

1/2 Cup Dried Apricots - Diced
1/2 Cup Assorted Dried Fruit
1/4 Cup Chopped Dates
1 Tablespoon Vanilla
1 1/2 Teaspoon Cinnamon
1/2 Cup Apple Juice
1/4 Cup Honey
10 oz. Fruit Preserves (your choice)
Directions:
1) Mix dry ingredients in a bowl.
2) Mix wet ingredients in a bowl.
3) Pour wet ingredients over dry ingredients & mix.
4) Spray 2 cookie sheets with pam.
5) Spread ingredients over cookie sheets.
6) Bake at 400 for 20 minutes.
7) Stir occasionally.
8) Remove from oven & cool.

2-3 Cups Non-Fat Milk or Soy/Rice Milk
Directions:
1) Mix dry ingredients in a bowl.
2) Mix wet ingredients in a bowl.
3) Combine & mix wet & dry ingredients.
4) Pour 1/4 cup of batter at at time into a non-stick skillet and cook until golden brown.

6 Large, Brown Potatos
2 Cup Rice Flour
Cilantro (desired amount)
Salt (desired amount)
6 Chopped Green Chillies
2 Tablespoon Butter
Directions:
1) Peel, cook & mash potatoes.
2) Mix whole grain flower and salt.
3) Add chillies to flower and salt & sprinkle cilantro over the top.
4) Add the butter and mashed potatoes.
5) Knead the mixture & roll it over the rice flour.
6) Make rotis with the dough & then bake it on a greased cookie sheet
until golden brown.
7) Serve with desired topping.
